Chicken Marsala

My wonderful mother-in-law got me a subscription to Taste of Home magazine for Christmas.  It’s a magazine that is entirely recipes, and a lot of them are easy ones– the kind that don’t take hours to make.  In my first copy, there was a recipe for Speedy Chicken Marsala, and I tried out the recipe.  I had to make a few tweaks, as I didn’t have the exact ingredients, but I was quite pleased with the outcome.  I thought I’d share the recipe here,  as I love finding yummy, quick dinners for my family.

Meal Planning Monday: January 28th… A Day Late!

Well, a day late and a meal short this week!  Actually, Monkey had his 4 month check up yesterday, so we ate out.  I was expecting a bit of crankiness.  I wonder if this is a self-fulfilling prophesy, as Monkey slept horribly last night.  In my groggy state, I forgot that he needed another dose of tylenol.  When MM woke up and asked if he could help with Monkey, and it dawned on me that Tylenol might help.  It did, but still was rather restless…. I digress.

We have continued to stick to our meal plan, and this has reduced dinner stress and eating out.  However, I’m still finding that we deviate either in the order of days, or take a meal out or add one in… does this happen to anyone else?mpm-1

Well, on to the meal plan, so MM knows what he’s eating tonight.  (He said he wasn’t sure last night!)

Traditional New Year’s Day Menu: Cooking Greens and Black Eyed Peas {Family Favorite}

This year, LB, my parents and I celebrated New Year’s Day with my in-laws in Florida.  (MM had to work, and BB was away with his dad’s family.)  Before arriving my mother-in-law and I talked about having New Year’s Day dinner.  Her family is from above the Mason-Dixon line, and her New Year’s Day menu is somewhat different from that I grew up with.  She grew up with mashed potatoes and sauerkraut.   I grew up with black-eyed peas, collards and rice.  We both always have pork on New Year’s.  We divided the menu up, and she cooked her traditional favorites and the pork, and I cooked the greens and peas.  Greens and peas are required for wealth and good luck in the New Year, so I was determined to have them!

Mario’s Special Spaghetti {A Family Favorite}

One of my most favorite people in the whole world, my dear friend Ella, first cooked this for my birthday about 6 years ago.  It was when I was going through a really rough time, and there is nothing like a delicious home cooked meal to warm the heart and heal the injured spirit.  I found the meal so delicious that I asked her for the recipe.  Mario’s Special Spaghetti was one of the first dishes that I cooked for MM when we were dating.  It’s in his top five favorite dinners that I cook, and I probably make it 2 times a month.  What’s even better is that Frog loves it too.  When I have a dish that both MM and Frog request, it instantly becomes a go-to dinner in my household.
